This relatively new chain's stated purpose is to take the mystery out of fish for those who don't eat it all the time. The "grilled fish" section of the menu is similar to the mix & match "choose your own pasta" feature common at Italian restaurants. The emphasis is on fresh, so types of fish available vary. For people who would prefer that fish stay mysterious, there are land-based options as well.
