Espada is what’s known as a churrascaria, where servers laden with a variety of charcoal-grilled animal proteins --- like beef, pork, chicken, lamb, salmon --- slice their wares directly onto the diner’s plate. The meat selection is complemented by the salad bar, which features fresh fruit, charcuterie, cheeses, grilled vegetables, olives, and prepared salads, as well as a hot line with beans, rice, and soup. Powered entirely with renewable solar, wind and hydro energy, Espada is Rochester’s first eco-restaurant, outfitted with reclaimed wood and recycled glass tiles.
