Through a series of interviews with restaurateurs and a bevy of culinary critics and gourmands, we are gradually introduced to a seminal chef.. Known as The Mandarin, Cecilia Chiang’s restaurant quickly earned critical acclaim for featuring a fully flavored northern Chinese menu. Chiang was notable for refusing to serve the “peasant food”—simple stir frys—that typically passed for Chinese cuisine in the United States.
